- Heat the olive oil in a large pot over medium heat. Add the onion and carrot with a pinch of salt and cook until softened, about 5 minutes.
- Stir in the cumin, turmeric, black pepper, and garlic and cook for 1 minute until fragrant.
- Add the rinsed lentils, vegetable broth, and salt. Bring to a boil, then reduce the heat and simmer, covered, for 20–25 minutes until the lentils have broken down and the soup is thick.
- Remove from heat and stir in the lemon juice. Ladle into bowls and top with chopped cilantro or parsley.
Notes
The soup thickens as it sits; add a splash of water or broth when reheating. Red lentils don’t require soaking, but give them a good rinse before cooking. For a smoother texture, blend a cup of the soup and stir it back in before adding the lemon.
