Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/4 tsp black pepper
  • 1 cup dried red lentils
  • 4 cups vegetable broth
  • 1 tsp salt
  • 2 tbsp fresh lemon juice
  • Chopped fresh cilantro or parsley, for serving

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and carrot with a pinch of salt and cook until softened, about 5 minutes.
  2. Stir in the cumin, turmeric, black pepper, and garlic and cook for 1 minute until fragrant.
  3. Add the rinsed lentils, vegetable broth, and salt. Bring to a boil, then reduce the heat and simmer, covered, for 20–25 minutes until the lentils have broken down and the soup is thick.
  4. Remove from heat and stir in the lemon juice. Ladle into bowls and top with chopped cilantro or parsley.

Notes

The soup thickens as it sits; add a splash of water or broth when reheating. Red lentils don’t require soaking, but give them a good rinse before cooking. For a smoother texture, blend a cup of the soup and stir it back in before adding the lemon.
