Ingredients
  

  • 1.5 lb boneless, skinless chicken thighs or breasts
  • 2 to 3 chipotle peppers in adobo sauce
  • 2 tbsp adobo sauce
  • 4 cloves garlic
  • 2 limes, juiced (about 4 tbsp)
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp honey or agave (optional)

Method
 

  1. Combine chipotle peppers, adobo sauce, garlic, lime juice, olive oil, cumin, salt, pepper, and honey in a blender. Blend on high 30 seconds until smooth.
  2. Pour marinade over chicken in a dish and coat each piece well. Marinate at room temperature for 15 to 30 minutes, or refrigerate for up to 4 hours.
  3. Preheat a skillet over medium high heat with a drizzle of oil. Sear chicken for 5 to 7 minutes per side until browned and cooked through to 165°F.
  4. Rest chicken 5 minutes, slice against the grain, and serve with fresh lime and pan juices.

Notes

Marinating time is hands-off, so account for at least 15 minutes before you start cooking. If using chicken breasts, pound them to an even ½ inch thickness so they cook evenly without drying out. Double the marinade batch and set half aside (before it touches raw chicken) if you want extra for drizzling.
