Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 cloves garlic, thinly sliced
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 lemon wedge, for serving

Method

  1. Heat olive oil in a large skillet over medium-high heat. Place sprouts cut-side down in a single layer and cook undisturbed for 5 minutes, until deeply browned.
  2. Add butter and garlic, stirring gently until the butter melts and garlic is fragrant, about 1 minute.
  3. Sprinkle with salt and pepper, toss, and cook 2 to 3 minutes more until tender with crisp edges.
  4. Transfer to a serving dish, squeeze lemon on top, and serve hot.

Notes

If you’re serving a large crowd and need to make the sprouts ahead, you can trim and halve them a day earlier and store them in a sealed bag in the fridge. Just pat them dry again before they go into the pan.
