Quick Roast Beef Wrap Recipe

Ingredients
  

  • 4 large flour tortillas (burrito size)
  • 12 oz thinly sliced deli roast beef
  • 4 slices provolone cheese
  • 2 cups baby arugula
  • ½ cup quick-pickled red onions
  • ½ cup sour cream
  • 2 tbsp prepared horseradish, drained
  • 1 tsp Dijon mustard
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Method
 

  1. In a small bowl, stir together sour cream, horseradish, Dijon, salt, and pepper until smooth. Set aside.
  2. Warm tortillas in a dry skillet over medium heat for 20 to 30 seconds per side, or until soft and pliable.
  3. Spread 2 tbsp sauce onto each tortilla, leaving a border. Layer roast beef, provolone, arugula, and pickled onions down the center. Fold in sides and roll tightly.
  4. Slice each wrap in half on a diagonal and serve immediately.

Notes

Assemble the wraps just before serving or packing. For make-ahead lunches, store the sauce, fillings, and tortillas separately and combine in the morning.
