Quick Red Cabbage Soup Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 small red cabbage (about 1.5 lbs / 680 g), shredded
  • 1 medium potato (about 6 oz / 170 g), peeled and diced
  • 4 cups vegetable broth
  • 1 tart apple (like Granny Smith), peeled and diced
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • black pepper, to taste
  • fresh dill, for garnish (optional)

Method
 

  1. Heat oil in a large pot over medium heat. Add onion and a pinch of salt; cook 5 minutes until softened. Stir in garlic and cook 1 minute more.
  2. Add shredded red cabbage and diced potato; cook 5 minutes, stirring, until cabbage wilts.
  3. Pour in broth and add diced apple. Bring to a boil, reduce heat, cover, and simmer 15 minutes or until potato is tender.
  4. Remove from heat; stir in apple cider vinegar, 1 tsp salt, and pepper. Ladle into bowls and top with dill if using; serve hot.

Notes

The soup thickens as it sits; thin with a little broth when reheating. For a creamy version, stir in a splash of heavy cream or coconut milk just before serving.
