Ingredients
  

  • 1 bunch radishes (about 8 oz), trimmed and thinly sliced
  • 1 English cucumber, thinly sliced (do not peel)
  • 1/4 cup thinly sliced red onion (optional)
  • 2 tbsp chopped fresh dill
  • 3 tbsp fresh lemon juice
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp sugar or honey (optional)

Method
 

  1. Thinly slice the radishes, cucumber, and red onion (if using) into rounds about 1/8 inch thick.
  2. In a large bowl, whisk together the lemon juice, olive oil, salt, pepper, and sugar (if using) until the salt dissolves. Stir in the dill.
  3. Add the sliced vegetables to the bowl and toss gently until evenly coated. Serve immediately.

Notes

If you have time, let the dressed salad sit at room temperature for 10 minutes before serving; the radishes soften slightly and absorb the flavors. For a regular cucumber, peel and seed it first. Leftover salad will soften but still tastes good for a day, though it’s best fresh.
