Quick Pan-Seared Wild Turkey Breast Recipe

Ingredients
  

  • 1 lb boneless wild turkey breast
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter, cold
  • 2 garlic cloves, smashed
  • 3 sprigs fresh thyme
  • Juice of 1/2 lemon

Method
 

  1. Pound the turkey to an even 1/2-inch thickness and season with salt, pepper, and garlic powder.
  2. Sear in hot olive oil over medium-high heat for about 3 minutes.
  3. Lower heat to medium, add butter, garlic, and thyme, flip turkey, and baste 2 to 3 minutes until the center reaches 155°F (68°C).
  4. Rest 5 minutes, slice against the grain, and finish with lemon juice and pan juices.

Notes

A quick dry brine (salt the breast and refrigerate uncovered for an hour) does even more for tenderness if you have the time. The internal temp will carry over to 160-165°F as it rests, so pulling it at 155°F is key.
