Method
- Toss chicken with chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and 1 tbsp oil. Let sit for at least 5 minutes.
- In a large skillet over high heat, add remaining 1 tbsp oil. Sear chicken in a single layer until golden, 3 to 4 minutes per side. Transfer to a plate.
- Reduce heat to medium-high. Sauté peppers and onion until charred and tender, about 5 minutes. Stir in garlic and cook 30 seconds.
- Return chicken and any juices to the skillet. Squeeze lime juice over everything and toss to coat. Cook 1 minute.
- Push filling to one side. Warm tortillas on the other side for 30 seconds per side. Serve immediately with toppings.
Notes
Get the skillet very hot before adding the chicken so you get a good sear. If you are using corn tortillas, wrap them in a damp paper towel and microwave for 20 seconds if you prefer them softer.
