Quick Mexican Chicken Marinade Recipe

Ingredients
  

  • 1/4 cup fresh lime juice (from 2 to 3 limes)
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 2 garlic cloves, minced
  • 1/2 tsp salt

Method
 

  1. Whisk together the lime juice, olive oil, chili powder, cumin, garlic, and salt in a small bowl until combined.
  2. Place 1 1/2 to 2 pounds of chicken in a bag or dish, pour the marinade over, and massage to coat. Refrigerate for at least 30 minutes, up to 4 hours.
  3. Heat a grill or cast-iron skillet to medium-high. Remove chicken from marinade, let excess drip off, and cook for 6 to 7 minutes per side (for boneless pieces) until charred and cooked to 165°F internal. Rest for 5 minutes, slice, and serve with lime wedges.

Notes

For the juiciest results, pull the chicken exactly at 165°F and let it rest before slicing. If you want a little extra tang at the table, squeeze fresh lime over the cooked chicken right before serving.
