Quick Mediterranean Quinoa Bowl Recipe

Ingredients
  

  • 1 cup quinoa
  • 1 ½ cups water
  • 1 pint cherry tomatoes
  • 1 medium cucumber
  • ½ small red onion
  • ½ cup Kalamata olives
  • 4 oz feta cheese
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • ¼ tsp salt
  • Small handful flat-leaf parsley

Method
 

  1. Rinse quinoa, then cook it in salted boiling water for 12 minutes. Rest covered off heat for 5 minutes, then fluff and spread to cool.
  2. While quinoa cooks, halve the tomatoes, dice the cucumber, thinly slice the red onion, and halve the olives.
  3. Whisk together olive oil, lemon juice, oregano, and salt to make the dressing.
  4. Toss warm quinoa with most of the dressing, then fold in the tomatoes, cucumber, onion, and olives.
  5. Crumble feta over the bowl, scatter parsley, and serve right away.

Notes

Quinoa tastes best when rinsed well and allowed to rest, covered, after cooking for a few minutes. If you plan to save portions for later, store the dressing on the side.
