Ingredients
  

  • 4 thinly sliced chicken breast cutlets, about 1 lb total
  • 1 tsp kosher salt, plus more for sauce
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ cup all-purpose flour
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 3 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Pat chicken dry, season both sides with salt, pepper, garlic powder, and paprika. Dredge lightly in flour, shaking off excess.
  2. Sear chicken in hot oil, 2 to 3 minutes per side, until golden and cooked to 165°F. Work in batches if needed and set cutlets aside on a plate.
  3. Lower heat to medium-low, melt butter in the same pan, add minced garlic, and cook 30 seconds. Stir in lemon juice, scraping up browned bits.
  4. Return chicken to pan, spoon sauce over cutlets, and sprinkle with parsley. Serve immediately.

Notes

If your chicken cutlets are thicker than ½ inch, give them a few gentle whacks with a rolling pin until they are an even ¼ to ½ inch thick. This ensures they cook through in the time it takes to build a nice crust.
