- Heat olive oil in a large skillet over medium-high heat. Pat chicken dry, season both sides with salt, pepper, garlic powder, and paprika. Dredge lightly in flour, shaking off excess.
- Sear chicken in hot oil, 2 to 3 minutes per side, until golden and cooked to 165°F. Work in batches if needed and set cutlets aside on a plate.
- Lower heat to medium-low, melt butter in the same pan, add minced garlic, and cook 30 seconds. Stir in lemon juice, scraping up browned bits.
- Return chicken to pan, spoon sauce over cutlets, and sprinkle with parsley. Serve immediately.
Notes
If your chicken cutlets are thicker than ½ inch, give them a few gentle whacks with a rolling pin until they are an even ¼ to ½ inch thick. This ensures they cook through in the time it takes to build a nice crust.
