Quick Gluten-Free Berry Cobbler Recipe

Ingredients
  

  • 4 cups frozen mixed berries
  • ½ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 cup gluten-free all-purpose flour blend
  • ¼ cup granulated sugar
  • 1½ tsp baking powder
  • ¼ tsp fine sea salt
  • 6 tbsp cold unsalted butter, cubed
  • 1 large egg
  • ½ cup whole milk

Method
 

  1. Toss frozen berries with ½ cup sugar, cornstarch, and lemon juice in a bowl. Spread into a 9-inch square dish.
  2. Whisk flour blend, ¼ cup sugar, baking powder, and salt. Cut in cold butter until crumbly. Stir in egg and milk just until a soft dough forms.
  3. Dollop dough over the fruit, leaving gaps.
  4. Bake at 375°F for 40 to 45 minutes until golden and bubbly. Cool 10 minutes, then scoop and serve.

Notes

If you use fresh berries, reduce the filling sugar to ⅓ cup. The cobbler will rest for 10 minutes after baking so the juices thicken, so plan that into your serving time.
