Quick Garlic Butter Shrimp and Asparagus Recipe

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • ½ tsp salt, plus more to taste
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Method
 

  1. Melt 2 tbsp butter in a large skillet over medium-high heat. Sear shrimp in a single layer, about 2 minutes per side, until pink and just cooked. Transfer to a plate.
  2. Melt the remaining 2 tbsp butter in the same skillet. Add asparagus and ¼ tsp salt. Cook 4 to 5 minutes, stirring occasionally, until bright green and tender-crisp.
  3. Reduce heat to medium. Stir in garlic and red pepper flakes, if using, and cook 30 seconds. Add lemon juice and return shrimp with any juices. Toss for about 1 minute until sauce coats everything. Season with remaining salt and pepper.
  4. Toss once more, then plate and spoon extra sauce over the top. Serve hot.

Notes

Pat the shrimp dry before cooking for a good sear. If you want a little more sauce, add a splash of chicken broth or white wine with the lemon juice.
