Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tbsp olive oil
  • ½ tsp kosher salt
  • Black pepper
  • 2 cloves garlic, minced
  • 2 tbsp grated Parmesan cheese
  • Red pepper flakes (optional)
  • Lemon wedges, for serving

Method

  1. Trim and halve the Brussels sprouts, then toss them in a bowl with the olive oil, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Place the sprouts cut side down in a single layer and cook without moving for 5 minutes, until deeply browned. Flip and cook 3 minutes more.
  3. Add the minced garlic and red pepper flakes, toss for 1 minute until fragrant, then remove from the heat.
  4. Transfer to a serving dish, scatter the Parmesan on top, and serve with lemon wedges.

Notes

These are best eaten right out of the pan while the edges are still crisp. If you need to keep them warm for a short time, spread them in a single layer on a baking sheet and hold them in a 200°F oven for up to 15 minutes, but they will soften a little.
