Method
- Mix ground chicken with salt, pepper, and garlic powder, then form into 4 equal balls.
- Heat a cast iron skillet over high heat with a little oil, place two balls in the pan, and smash each to ¼ inch thick.
- Cook for 2 minutes until deeply golden, flip, top with cheese, and cook 1 minute more. Repeat with remaining patties.
- Toast buns with garlic butter if using, spread with special sauce, add pickles, and stack two patties per bun. Serve immediately.
Notes
For the crispiest crust, smash the patties as thin as you can and let them cook undisturbed until they release from the pan. If using all breast meat, add a teaspoon of olive oil to the meat mix to keep it tender.
