Quick Chicken and Broccoli Stir-Fry Recipe

Ingredients
  

  • 1 lb boneless skinless chicken breasts, sliced thin across the grain
  • 1 tbsp plus 3 tbsp soy sauce, divided
  • 1 tsp plus 1 tbsp cornstarch, divided
  • Pinch of black pepper
  • 2 tbsp oyster sauce
  • 1 tsp toasted sesame oil
  • 1 tbsp brown sugar
  • 1/2 cup chicken broth
  • 2 tbsp vegetable oil, divided
  • 4 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/4 tsp red pepper flakes

Method
 

  1. Toss the chicken with 1 tbsp soy sauce, 1 tsp cornstarch, and pepper. Let it sit for 10 minutes.
  2. Heat 1 tbsp oil in a skillet over high heat. Sear the chicken in a single layer for 2 minutes per side, then transfer to a plate.
  3. Add the remaining 1 tbsp oil and stir-fry the broccoli for 2 minutes. Add garlic, ginger, and red pepper flakes and cook 30 seconds.
  4. Pour in 3 tbsp soy sauce, oyster sauce, brown sugar, and broth. Simmer, then stir in a slurry of 1 tbsp cornstarch and 2 tbsp water. Cook 1 minute until thickened.
  5. Return chicken to the pan, toss to coat, and remove from heat. Stir in sesame oil. Serve over rice.

Notes

If you like a little char on the broccoli, let it sit in the hot oil without stirring for the first minute. Let the stir-fry rest for a couple minutes after adding the chicken so the sauce can settle into the meat.
