Method
- Toss the chicken with 1 tbsp soy sauce, 1 tsp cornstarch, and pepper. Let it sit for 10 minutes.
- Heat 1 tbsp oil in a skillet over high heat. Sear the chicken in a single layer for 2 minutes per side, then transfer to a plate.
- Add the remaining 1 tbsp oil and stir-fry the broccoli for 2 minutes. Add garlic, ginger, and red pepper flakes and cook 30 seconds.
- Pour in 3 tbsp soy sauce, oyster sauce, brown sugar, and broth. Simmer, then stir in a slurry of 1 tbsp cornstarch and 2 tbsp water. Cook 1 minute until thickened.
- Return chicken to the pan, toss to coat, and remove from heat. Stir in sesame oil. Serve over rice.
Notes
If you like a little char on the broccoli, let it sit in the hot oil without stirring for the first minute. Let the stir-fry rest for a couple minutes after adding the chicken so the sauce can settle into the meat.
