- Preheat oven to 350°F (175°C) and line a 12 cup muffin tin. In a large bowl, mash bananas, then whisk in eggs, yogurt, maple syrup, and vanilla until smooth.
- Add oat flour, protein powder, baking powder, baking soda, and salt. Fold with a spatula just until no dry flour remains, then gently stir in chocolate chips.
- Divide batter evenly among the 12 cups, filling each to the top. Tap the pan once on the counter.
- Bake 18 to 22 minutes, until tops spring back and a toothpick has moist crumbs. Cool in the pan 5 minutes, then transfer to a rack and serve warm.
Notes
Protein powder brands absorb liquid differently. If the batter looks dry and crumbly after folding, stir in a tablespoon of milk. If it seems loose, add a spoonful of oat flour and wait a minute before scooping.
