Quick Banana Protein Muffins Recipe

Ingredients
  

  • 3 large ripe bananas, mashed (about 1 cup)
  • 2 large eggs
  • ½ cup plain Greek yogurt (full fat)
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • ½ cup vanilla or unflavored protein powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup dark chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a 12 cup muffin tin. In a large bowl, mash bananas, then whisk in eggs, yogurt, maple syrup, and vanilla until smooth.
  2. Add oat flour, protein powder, baking powder, baking soda, and salt. Fold with a spatula just until no dry flour remains, then gently stir in chocolate chips.
  3. Divide batter evenly among the 12 cups, filling each to the top. Tap the pan once on the counter.
  4. Bake 18 to 22 minutes, until tops spring back and a toothpick has moist crumbs. Cool in the pan 5 minutes, then transfer to a rack and serve warm.

Notes

Protein powder brands absorb liquid differently. If the batter looks dry and crumbly after folding, stir in a tablespoon of milk. If it seems loose, add a spoonful of oat flour and wait a minute before scooping.
