- Heat the olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook, stirring often, about 5 minutes until onion is translucent. Add garlic and a pinch of salt and cook 1 minute more.
- Pour in the tomatoes (with juices), broth, potato, bay leaf, and thyme. Bring to a boil, then reduce heat to a simmer, cover, and cook 15 minutes until potato is tender.
- Uncover and add green beans and corn. Simmer uncovered 5 minutes until green beans are crisp-tender. Remove the bay leaf and season with salt and pepper to taste.
- Ladle into bowls and squeeze a lemon wedge over each. Serve hot.
Notes
The soup thickens slightly as it cools. Add a little extra broth when reheating if needed. Fresh lemon at the table makes a surprising difference, so do not skip that final squeeze.
