Method
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Stir peanut butter, sugar, and egg together in a bowl until smooth.
- Roll tablespoonfuls of dough into balls and place them 2 inches apart on the sheet. Press with a sugar-dipped fork in a crosshatch pattern to flatten.
- Bake for 10 to 12 minutes, until edges are set and just golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.
Notes
This dough does not need chilling, but 30 minutes in the fridge will give you thicker, puffier cookies. If the dough feels too sticky to roll, lightly dampen your hands with water. Every oven runs a little differently, so start checking at the 9-minute mark.
