- Mash the bananas in a bowl until mostly smooth, then whisk in the eggs. Stir in the flour just until no dry streaks remain.
- Melt a small pat of butter in a nonstick skillet over medium heat. Drop 2-tablespoon mounds of batter into the pan and cook about 2 minutes per side, until golden and cooked through.
- Stack the pancakes on a plate and serve right away with maple syrup or fresh berries.
Notes
If your bananas are on the small side, the batter may be a little thick. Add a tablespoon of milk or water to loosen it. These pancakes are best hot off the pan, but they hold well in a warm oven if you're cooking for a crowd.
