Ingredients
  

  • 2 cups self-rising flour
  • 1 1/2 cups cold heavy cream, plus extra for brushing

Method
 

  1. Preheat oven to 450°F (230°C) and line a baking sheet with parchment.
  2. In a large bowl, stir the flour and cream until a shaggy, sticky dough comes together.
  3. Turn dough onto a floured surface and pat into a 3/4-inch-thick rectangle. Fold once for layers if you like.
  4. Cut biscuits with a floured cutter, pressing straight down without twisting, and place close together on the sheet.
  5. Brush tops with extra cream and bake 12–15 minutes until deep golden. Serve warm.

Notes

If your dough seems too wet to handle, add a tablespoon more flour as you pat it out. These biscuits are best fresh, so bake them right before you plan to eat. You can reheat any leftovers in a toaster oven to bring back the crispy top.
