- Pat shrimp dry, season with salt and pepper. Heat oil in a large skillet over medium-high heat. Add shrimp in a single layer and sear 2 minutes per side until pink and just cooked; transfer to a plate.
- Lower heat to medium, add butter to the skillet. Once melted, stir in garlic and red pepper flakes; cook 30 seconds until fragrant.
- Pour in wine, scraping up browned bits, and simmer 2 minutes until reduced by half. Stir in lemon juice and zest.
- Return shrimp to the pan, add parsley, and toss for 1 minute to coat. Serve over pasta or rice immediately.
Notes
If using frozen shrimp, thaw completely and pat very dry before cooking. The sauce can be made ahead without the shrimp; reheat and add freshly seared shrimp just before serving.
