Ingredients

  • 3 cups rolled oats
  • 1 cup raw pecans, roughly chopped
  • ½ cup pepitas
  • ¼ cup pumpkin purée
  • ⅓ cup maple syrup
  • ¼ cup melted coconut oil
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla extract
  • ½ tsp fine sea salt

Method

  1. In a large bowl, stir together the oats, pecans, pepitas, salt, and pumpkin pie spice.
  2. Whisk the pumpkin purée, maple syrup, melted coconut oil, and vanilla in a small bowl, then pour over the dry mixture and stir to coat evenly.
  3. Preheat the oven to 325°F (160°C). Spread the mixture on a parchment-lined baking sheet, press firmly, and bake for 20-25 minutes, stirring once after 12 minutes, until deeply golden.
  4. Let the granola cool completely on the sheet without stirring, then break into clusters and store.

Notes

The granola will feel a little soft right out of the oven but will crisp up as it cools, so try not to overbake it. For the best clusters, let it cool entirely before breaking.
