Ingredients
  

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt

Method
 

  1. Beat the butter and powdered sugar until pale and fluffy, about 2 minutes.
  2. Mix in the pumpkin puree, vanilla, pumpkin pie spice, and salt until combined.
  3. Gradually add the flour and mix just until a dough forms. Shape into a 2-inch log on plastic wrap, wrap tightly, and chill for at least 1 hour.
  4. Preheat oven to 350°F (175°C). Slice the chilled log into 1/4-inch rounds and place on a parchment-lined baking sheet.
  5. Bake for 12 to 14 minutes, until edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.

Notes

The dough needs to chill for at least 1 hour before slicing, but you can make the log up to 2 days ahead and keep it in the fridge. For a cinnamon-sugar finish, brush the warm cookies with a little melted butter and dip them in a mix of sugar and extra pumpkin pie spice.
