Pumpkin Protein Balls Recipe

Ingredients
  

  • ½ cup pumpkin puree
  • ½ cup creamy peanut butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1½ cups old-fashioned rolled oats
  • ½ cup vanilla protein powder
  • 1 tsp pumpkin pie spice
  • pinch of salt
  • ⅓ cup mini chocolate chips

Method
 

  1. Stir together the pumpkin puree, peanut butter, maple syrup, and vanilla until smooth.
  2. Fold in the oats, protein powder, pumpkin pie spice, salt, and chocolate chips until no dry spots remain.
  3. Roll the mixture into balls, press a few extra chocolate chips on top, and chill for 30 minutes until firm.

Notes

Chilling time is not counted in the prep. A quick 30-minute rest in the fridge firms up the balls so they are easy to grab and go. If the dough sticks to your hands as you roll, dampen your palms lightly with water. These taste best cold but can sit at room temperature for a few hours.
