Ingredients
  

  • 1/2 cup pumpkin puree
  • 1/4 cup chia seeds
  • 3/4 cup milk of choice
  • 2 tbsp pure maple syrup
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Toppings of choice (pecans, granola, whipped cream, optional)

Method
 

  1. Whisk the pumpkin puree, milk, maple syrup, pumpkin pie spice, vanilla, and salt until smooth.
  2. Stir in the chia seeds thoroughly and let the mixture sit on the counter for 5 minutes, then stir again firmly.
  3. Divide the mixture evenly between two jars or bowls, cover tightly, and refrigerate for at least 4 hours or overnight.
  4. Remove from the fridge, add your favorite toppings, and serve cold.

Notes

Chill the pudding for at least 4 hours, though overnight gives the deepest flavor and best set. If the pudding thickens too much after a day or two, stir in a little extra milk before eating.
