- Press together graham cracker crumbs, 2 tbsp sugar, pinch of salt, and melted butter in a 9x13 pan into an even crust.
- Beat cream cheese and ¾ cup sugar until smooth, then mix in eggs one at a time on low speed, and add vanilla.
- Spread 1½ cups plain batter over the crust. Mix pumpkin, spices, and salt into the remaining batter, then spread it on top.
- Bake at 350°F (175°C) for 35 to 40 minutes until edges are set and center jiggles slightly. Cool 1 hour on a rack, then chill at least 4 hours.
- Lift out and slice into 16 bars; serve cold.
Notes
Chill the bars overnight for the cleanest slices and the best layered look. If your pumpkin puree is watery, spoon off any excess liquid before measuring.
