- Preheat oven to 350°F (175°C) and grease a 9x13-inch pan. Whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger.
- In a large bowl, beat the softened butter and 1 cup sugar until fluffy. Add the 2 eggs one at a time, then the 2 teaspoons vanilla. Gradually mix in the dry ingredients and milk in alternating additions, just until smooth.
- Whisk the pumpkin puree, evaporated milk, 3 eggs, 3/4 cup sugar, pumpkin pie spice, 1 teaspoon vanilla, and 1/4 teaspoon salt in a medium bowl until smooth.
- Spread the cake batter in the pan. Slowly pour the pumpkin custard over the back of a spoon to cover the batter without mixing the layers.
- Mix the 1/2 cup flour and brown sugar for the streusel; cut in the cold butter until crumbly, then stir in the pecans. Sprinkle evenly over the pumpkin layer.
- Bake 45 to 55 minutes until the topping is golden and the center no longer jiggles. Cool in the pan for at least 30 minutes before slicing.
Notes
Let the cake rest after baking so the pumpkin layer fully sets. Slice it while hot and the custard will be looser and harder to cut neatly. A quick chill in the fridge firms it up if you’re short on time.
