Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1/2 cup pure pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old-fashioned rolled oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp fine sea salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment. Beat butter and brown sugar until pale and fluffy, about 2 minutes. Beat in pumpkin puree, egg, and vanilla until combined.
  2. Whisk flour, oats, baking soda, cinnamon, nutmeg, cloves, and salt in a separate bowl.
  3. Stir the dry mixture into the wet mixture just until no dry streaks remain. Do not overmix.
  4. Drop 2-tablespoon mounds onto the baking sheet, spacing them 2 inches apart. Bake 10 to 12 minutes until edges are set and lightly golden.
  5. Let cookies rest on the sheet for 2 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.

Notes

These cookies firm up as they cool but stay soft in the middle. If your kitchen is warm and the dough feels sticky, pop it in the fridge for 10 minutes before scooping.
