Pumpkin Mac and Cheese Recipe

Ingredients
  

  • 8 oz elbow macaroni
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup pumpkin puree
  • 1 ½ cups shredded sharp cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ tsp ground nutmeg

Method
 

  1. Bring a large pot of salted water to a boil. Cook the macaroni until al dente, about 8 minutes. Drain.
  2. Melt the butter in a large skillet over medium heat. Whisk in the flour and cook, stirring, for 1 minute until pale golden.
  3. Reduce heat to low. Slowly whisk in the warm milk, then stir in the pumpkin puree, salt, pepper, and nutmeg. Simmer for 2 minutes.
  4. Add the cheddar and Parmesan a handful at a time, whisking until melted and smooth.
  5. Fold the drained pasta into the sauce. Thin with a splash of warm milk if needed. Serve right away with extra black pepper and nutmeg.

Notes

The sauce will continue to thicken as it cools. When reheating, add a splash of milk to bring back the creamy texture.
