Pumpkin French Toast with Crispy Edges Recipe

Ingredients
  

  • 4 thick slices brioche or challah
  • 1/2 cup pumpkin puree
  • 1/3 cup whole milk
  • 2 large eggs
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • Pinch of salt
  • 2 tbsp unsalted butter
  • Warm maple syrup, for serving

Method
 

  1. In a shallow dish, whisk together the eggs, pumpkin puree, milk, brown sugar, vanilla, cinnamon, nutmeg, ginger, and salt until smooth.
  2. Heat a large nonstick skillet over medium heat. Soak the bread slices in the custard for about 30 seconds per side, pressing gently.
  3. Melt 1 tbsp butter in the skillet and cook 2 slices for 3 to 4 minutes per side until deep golden. Wipe the pan, melt the remaining butter, and cook the last 2 slices. Serve immediately with butter and warm maple syrup.

Notes

Use the thickest slices of bread you can find so they hold up to the custard. If the pan starts to smoke before the toast is done, lower the heat a little. A wire rack in a 200°F oven keeps the first batch warm and crisp while you finish frying.
