Ingredients
  

  • 1/2 cup canned pumpkin puree
  • 1 cup milk, any kind
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • Pinch of salt
  • 1/4 cup chia seeds

Method
 

  1. Whisk pumpkin puree, milk, maple syrup, vanilla, pumpkin pie spice, and salt in a bowl until smooth.
  2. Stir in chia seeds. Let the bowl sit for 5 minutes, then stir again to break up any clumps.
  3. Divide into two jars, cover, and refrigerate for at least 4 hours or overnight.
  4. Stir each portion, top with yogurt, cinnamon, or pecans, and serve cold.

Notes

The pudding needs at least 4 hours to set, but overnight yields the best texture. If it thickens too much, stir in a splash of milk. Always use plain canned pumpkin, not pumpkin pie filling.
