Method
- Whisk together flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
- Beat butter, 1/2 cup granulated sugar, and brown sugar until fluffy, about 2 minutes.
- Mix in pumpkin puree, egg yolk, and vanilla. Stir in dry ingredients until just combined.
- Beat cream cheese, 2 tbsp sugar, and a splash of vanilla until smooth.
- Preheat oven to 350°F (175°C). Place 1 1/2 tablespoon dough scoops on parchment-lined sheets, flatten slightly, add 1/2 tsp filling in center, top with another dough disc, seal, and roll into balls. Bake 12 to 14 minutes until edges are set.
- Cool on the baking sheet for 2 minutes, then transfer to a wire rack to finish cooling. Stack and serve.
Notes
If the dough feels too sticky to handle, chill it for 30 minutes before shaping. The cream cheese filling can be made a day ahead and refrigerated; bring to room temperature before using.
