Pumpkin Banana Bread Recipe

Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 overripe bananas (about 1 cup mashed)
  • 1 cup pumpkin puree
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F and grease a 9x5 inch loaf pan. Mash bananas in a large bowl, then whisk in pumpkin, both sugars, oil, eggs, and vanilla until smooth.
  2. In a separate bowl, whisk flour, baking soda, salt, and pumpkin pie spice.
  3. Gently fold the dry ingredients into the wet mixture with a spatula until just combined, then scrape the batter into the pan.
  4. Bake 50 to 55 minutes until a toothpick inserted in the center comes out clean. Cool in the pan 10 minutes, then remove to a wire rack.
  5. Let cool completely, then slice with a serrated knife. Serve warm or at room temperature.

Notes

If your bananas aren’t spotty enough, roast them in a 300°F oven for 15 minutes to soften and sweeten. Cool the loaf fully before wrapping to avoid a soggy crust. This bread tastes even better the next day after the flavors mellow together.
