Pull Apart Chicken Tacos Recipe

Ingredients
  

  • 2 lbs boneless skinless chicken thighs
  • 1 jar (16 oz) salsa verde
  • 2 tbsp taco seasoning
  • 4 cloves garlic, minced
  • Juice of 1 lime
  • Salt, if needed

Method
 

  1. Place the chicken thighs in a 6 quart slow cooker. Pour the salsa verde over them, add the taco seasoning and minced garlic, and stir to coat.
  2. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours, until the chicken shreds easily with a fork.
  3. Use two forks to shred the chicken in the pot, stir it into the juices, and add the lime juice. Taste and add salt if needed.
  4. Pile the shredded chicken into warm tortillas with your favorite toppings and serve right away.

Notes

The cook time above is for the low setting. If you prefer high, 3 to 4 hours works, and boneless breasts will be done in about 2.5 to 3 hours. The chicken can hold on the warm setting for an hour once it’s cooked. If the sauce looks thin after shredding, leave the lid off on high for 10 minutes to reduce it a bit.
