Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup vanilla or unflavored protein powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup packed brown sugar
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment. In a large bowl, whisk flour, protein powder, baking soda, baking powder, spices, and salt until uniform.
  2. Add pumpkin puree, eggs, brown sugar, oil, and vanilla to the bowl. Whisk until smooth and glossy.
  3. Fold the batter gently with a spatula until just combined. Stir in chocolate chips if using.
  4. Scrape batter into prepared pan, smooth the top, and scatter a few extra chips on top. Bake 50 to 60 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  5. Cool in the pan for 10 minutes, then transfer to a wire rack. Cool completely before slicing.

Notes

Line your pan with parchment paper so the loaf lifts out cleanly. The bread tastes even better on the second day as the spices settle, so it is a great make-ahead bake. If you use a very sweet protein powder, the top may darken faster; tent with foil after 40 minutes if needed.
