Protein Muffins with Protein Powder Recipe

Ingredients
  

  • 1 cup (100g) vanilla protein powder
  • 1 cup (120g) oat flour
  • 2 tsp baking powder
  • ½ tsp fine sea salt
  • ½ cup (120g) plain Greek yogurt
  • ½ cup (120ml) milk
  • ⅓ cup (80ml) honey or maple syrup
  • 2 large eggs
  • ¼ cup (60ml) avocado oil or melted coconut oil
  • 1 tsp vanilla extract
  • ½ cup (85g) dark chocolate chips or fresh blueberries (optional)

Method
 

  1. Preheat oven to 350°F (180°C) and line a 12‑cup muffin tin. Whisk the yogurt, milk, honey, eggs, oil, and vanilla until smooth.
  2. Fold in the oat flour, protein powder, baking powder, and salt until just combined. Gently fold in chocolate chips or blueberries if using.
  3. Divide the batter evenly among the muffin cups and bake for 18–22 minutes, until golden and a toothpick comes out clean.
  4. Cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

If your protein powder is unsweetened or unflavored, you may want to increase the honey by a tablespoon or two. The muffins keep well but are best enjoyed within 2 days.
