Protein Balls With Dates Recipe

Ingredients
  

  • 1 cup pitted Medjool dates (about 10 to 12)
  • 1 cup raw almonds
  • 2 scoops vanilla protein powder (about 50 g)
  • ½ cup rolled oats
  • 2 tbsp natural peanut butter
  • A generous pinch of salt
  • 2 to 3 tbsp unsweetened shredded coconut, for rolling

Method
 

  1. Place dates and almonds in a food processor. Pulse until broken down, then run continuously until the mixture forms a thick, sticky paste.
  2. Add protein powder, oats, peanut butter, and salt; pulse until a uniform, slightly tacky dough forms.
  3. Scoop tablespoon-sized portions and roll into balls, then roll each in shredded coconut to coat. Place on a plate and refrigerate until firm.

Notes

If your dates are on the dry side, soak them in warm water for 10 minutes and drain before using. The balls firm up after about 30 minutes in the fridge and are easiest to coat when the dough is not overly warm.
