Prime Rib Sandwich Recipe

Ingredients
  

  • 1/2 cup sour cream
  • 2 tbsp prepared horseradish
  • 1 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp unsalted butter
  • 1 large yellow onion, thinly sliced
  • 4 crusty hoagie rolls or ciabatta rolls
  • 4 slices provolone cheese
  • 1 lb cooked prime rib, sliced thin against the grain
  • 1 cup beef broth

Method
 

  1. Whisk the sour cream, horseradish, mayonnaise, Dijon, Worcestershire, salt, and pepper in a small bowl until smooth. Refrigerate.
  2. Melt half the butter in a skillet over medium heat. Sauté the onion with a pinch of salt until soft and golden, about 8 to 10 minutes. Set aside.
  3. Heat the broiler and position a rack 6 inches from the heat. Split the rolls, place them cut side up on a baking sheet, and broil 1 to 2 minutes until lightly toasted.
  4. Melt the remaining butter in the same skillet over low heat. Add the sliced prime rib and warm gently for about 2 minutes, stirring once, just until no longer cold.
  5. Spread the horseradish sauce on both cut sides of each roll. Layer the warm prime rib, onions, and a slice of provolone on the bottom halves. Broil open-faced about 2 minutes until the cheese melts and edges crisp. Warm the beef broth in a small saucepan. Close the sandwiches, slice on a diagonal, and serve with small bowls of warm au jus.

Notes

If you are using leftover prime rib, pull it straight from the fridge to slice; the cold meat cuts much thinner and cleaner. Just be gentle when you warm it so the slices stay tender and juicy.
