Pressure Cooker Pulled Beef Burgers Recipe

Ingredients
  

  • 3 lbs beef chuck roast, cut into 4 large chunks
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp vegetable oil
  • 1 yellow onion, thinly sliced
  • 4 garlic cloves, smashed
  • 1 cup barbecue sauce
  • 1/4 cup apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 2 tsp smoked paprika
  • 1/2 tsp chipotle powder
  • 1/2 cup low-sodium beef broth
  • 8 brioche burger buns
  • Softened butter, for the buns
  • Coleslaw, pickles, or extra sauce, for serving

Method
 

  1. Season the beef chunks with salt and pepper. Heat oil on the highest sauté setting and brown the beef in two batches, about 4 minutes per batch.
  2. Turn off the sauté function. Add onion, garlic, barbecue sauce, vinegar, Worcestershire, paprika, chipotle, and broth. Return the beef to the pot.
  3. Lock the lid and pressure cook on high for 60 minutes. Let the pressure release naturally for 10 minutes, then quick release.
  4. Transfer beef to a bowl and shred with two forks. Sauté the sauce until thick, about 10 minutes, then toss the meat back in.
  5. Butter and toast the buns until golden. Pile the pulled beef onto the buns and top with coleslaw or pickles.

Notes

This recipe works best with a well-marbled chuck roast; a leaner cut can turn dry under pressure. If your barbecue sauce is on the thin side, the sauce thickening step is your chance to get it just right. Leftovers taste great piled onto baked sweet potatoes.
