Portillo’s Chocolate Cake Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup hot brewed coffee
  • Frosting
  • ½ cup unsalted butter
  • ¼ cup unsweetened cocoa powder
  • 6 tablespoons whole milk
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of fine sea salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and dust with cocoa powder. In a large bowl, whisk together flour, sugar, cocoa, baking soda, baking powder, and salt.
  2. In a second bowl, whisk buttermilk, oil, eggs, and vanilla until smooth.
  3. Stir wet mixture into dry ingredients until just combined, then pour in hot coffee and stir until batter is smooth and thin.
  4. Divide batter evenly between pans. Bake 30 to 35 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Cool in pans 10 minutes, then turn out onto a rack to cool completely.
  5. In a saucepan over medium heat, cook butter, cocoa, and milk, stirring constantly, until the mixture boils and is smooth, about 3 minutes. Remove from heat and let cool 5 minutes, then beat in powdered sugar, vanilla, and salt until glossy and spreadable.
  6. Place one cooled cake layer on a plate, spread with one-third of the frosting, top with second layer, and frost top and sides. Serve right away or let set for an hour.

Notes

The cake layers must be completely cool before you frost them or the frosting will melt and slide off. For the deepest chocolate flavor, use brewed coffee, but hot water works in a pinch. Store the frosted cake in an airtight container in the fridge for up to 4 days; bring to room temperature before serving for the softest texture.
