Ingredients

  • 4 large portabella mushroom caps, stems removed, gills scraped
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and black pepper
  • 4 burger buns, split
  • 4 slices provolone or mozzarella (optional)
  • Lettuce, tomato slices, red onion
  • ¼ cup mayonnaise
  • 1 small garlic clove, minced
  • 2 tsp lemon juice
  • Pinch salt

Method

  1. Whisk 2 tbsp olive oil, 2 tbsp soy sauce, 1 tbsp balsamic vinegar, 1 tsp smoked paprika, ½ tsp garlic powder, and pepper in a dish. Add mushroom caps, turn to coat, and marinate 10 minutes.
  2. Heat grill to medium-high (400°F). Oil grates. Grill mushrooms gill-side down 4 to 5 minutes, flip, and cook 3 to 4 minutes more. Add cheese in the last minute if using.
  3. Toast buns cut-side down on the grill for about 1 minute until light golden.
  4. Stir together ¼ cup mayonnaise, minced garlic, 2 tsp lemon juice, and a pinch of salt for the aioli.
  5. Spread aioli on bottom buns, layer lettuce, tomato, onion, top with mushroom, and close the bun. Serve immediately.

Notes

Let the grilled mushrooms rest for just a minute off the heat before building the burgers. That minute lets the juices settle so the bun doesn’t get soggy.
