Popeyes Chicken Sandwich Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts (about 8 oz each), halved crosswise into 4 pieces
  • 1 cup buttermilk
  • 1 tbsp hot sauce, plus 1 tsp for the mayo
  • 1 tsp kosher salt, plus 1 tsp for the flour mixture
  • 1 ½ cups all-purpose flour
  • ½ cup cornstarch
  • 1 tbsp smoked paprika, plus ½ tsp for the mayo
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • ½ tsp black pepper
  • Vegetable oil, for frying
  • 4 brioche burger buns
  • ¼ cup mayonnaise
  • Sliced dill pickles, for serving

Method
 

  1. Whisk buttermilk, 1 tbsp hot sauce, and 1 tsp salt. Add chicken pieces, soak 20 minutes at room temperature or up to 2 hours chilled.
  2. Stir flour, cornstarch, 1 tbsp paprika, garlic powder, onion powder, cayenne, remaining 1 tsp salt, and black pepper in a shallow bowl.
  3. Lift chicken from buttermilk, press firmly into flour mixture on both sides, and rest on a wire rack. Heat 3 to 4 inches of oil to 350°F (175°C). Fry in batches 5 to 6 minutes until deep golden and 165°F (74°C) internal temp, letting oil return to 350°F between batches.
  4. Toast brioche buns cut side down in a dry skillet over medium heat for about 1 minute until lightly golden.
  5. Mix mayonnaise, 1 tsp hot sauce, and ½ tsp paprika. Spread on toasted buns, place fried chicken on bottom bun, add pickles, and close sandwich. Serve immediately.

Notes

For the best crunch, get your oil back to temperature after each batch and do not pile the chicken while it rests. Store any leftover coating flour in a sealed container if you plan to fry a second round later that week.
