Poor Man’s Husband Casserole Recipe

Ingredients
  

  • 1 lb lean ground beef
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 (10.75 oz) can condensed tomato soup
  • 1/2 cup whole milk
  • 8 oz uncooked wide egg noodles
  • 8 oz sharp cheddar cheese, shredded (about 2 cups)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano

Method
 

  1. Preheat oven to 375°F. In a large oven-safe skillet or Dutch oven over medium-high heat, cook the ground beef, onion, and garlic until beef is browned, about 7 minutes. Drain fat.
  2. Reduce heat to low. Stir in tomato soup, milk, salt, pepper, and oregano until smooth. Fold in uncooked egg noodles and 1 cup of the shredded cheddar.
  3. If skillet isn’t oven-safe, transfer mixture to a greased 9x13-inch baking dish. Smooth top and sprinkle with remaining 1 cup cheese. Bake 20 to 25 minutes until bubbly and cheese is golden.
  4. Let cool 5 minutes, then scoop and serve hot.

Notes

For a crispier top, broil for 1 minute after baking. The casserole will thicken further as it rests.
