Ingredients
  

  • ½ cup (115g) unsalted butter, softened
  • ½ cup (60g) powdered sugar (plus extra for rolling)
  • 1 tsp vanilla extract
  • 1 cup (120g) all-purpose flour, spooned and leveled
  • ¼ tsp fine salt
  • ¾ cup (85g) finely ground pecans

Method
 

  1. Beat the butter and ½ cup powdered sugar until pale and fluffy, about 2 minutes. Beat in the vanilla.
  2. On low speed, mix in the flour and salt until just combined. Fold in the ground pecans by hand.
  3. Preheat the oven to 325°F (163°C). Line a baking sheet with parchment paper, then roll tablespoon-sized portions of dough into balls and place 2 inches apart. Bake 14 to 16 minutes, until bottoms are lightly golden and tops look dry.
  4. Cool 5 minutes on the sheet. Roll warm cookies in the remaining powdered sugar, then transfer to a rack. Sift more sugar on top and let set.

Notes

If the dough feels sticky when rolling, chill it for 15 minutes first. The cookies stay tender stored in an airtight container, but a fresh dusting of sugar right before serving always makes them prettiest.
