Polish Christmas Cookies (Kolaczki) Recipe

Ingredients
  

  • 8 oz full-fat cream cheese, softened
  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/4 tsp fine sea salt
  • 1/2 cup thick apricot or raspberry jam
  • Powdered sugar, for dusting

Method
 

  1. Beat the cream cheese and butter until smooth. Add flour and salt, mixing just until a soft dough forms. Shape into a disk, wrap, and chill at least 1 hour.
  2. Preheat oven to 375°F. On a floured surface, roll half the dough into a thin square and cut into 2-inch squares.
  3. Place 1/2 teaspoon jam in the center of each square. Overlap two opposite corners and press to seal. Transfer to a parchment-lined baking sheet.
  4. Bake 12 to 14 minutes, until edges are lightly golden. Cool on the sheet for 5 minutes, then move to a wire rack to cool completely.
  5. Once cool, dust heavily with powdered sugar. Serve at room temperature.

Notes

The dough can be made up to 3 days ahead and kept chilled. The 1-hour minimum chill time is essential, so plan accordingly; it is not included in the prep time. For the cleanest cut, chill the rolled-out dough on the baking sheet in the fridge for 10 minutes before cutting and filling.
