Pistachio Crusted Salmon Recipe

Ingredients
  

  • 4 (6 oz) skin-on salmon fillets
  • ½ cup shelled unsalted pistachios
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 2 tbsp olive oil, divided
  • Salt and freshly ground black pepper
  • Lemon wedges, for serving

Method
 

  1. Heat oven to 400°F (200°C). Whisk together mustard, honey, 1 tablespoon olive oil, and a pinch of salt and pepper.
  2. Pat salmon dry, season with salt and pepper, place skin-side down, and brush the mustard glaze over the tops.
  3. Chop pistachios, toss with the remaining 1 tablespoon olive oil and a small pinch of salt, then press the mixture onto the glazed fillets.
  4. Bake until the salmon just flakes and the crust is golden, 12 to 18 minutes depending on thickness. Tent with foil if the nuts brown too fast.
  5. Serve with lemon wedges and a squeeze of fresh juice.

Notes

If your fillets are on the thick side, bake closer to the 18-minute mark. Salmon is cooked when it flakes easily and an instant-read thermometer registers 125°F to 130°F in the center. For the crunchiest crust, serve right away.
