- Preheat oven to 450°F (230°C). Whisk flour, baking powder, baking soda, and salt. Grate in frozen butter and toss until crumbly.
- Stir in buttermilk until just combined. Fold dough over itself 4-5 times on a floured surface.
- Pat to 3/4-inch thickness, cut with a 2 1/2-inch cutter, and place on a baking sheet. Bake 12-14 minutes until golden.
- Cook sausage in a skillet over medium-high heat until browned, about 6-8 minutes.
- Sprinkle 1/4 cup flour over the sausage and stir 1 minute. Slowly add milk, pepper, and a pinch of salt. Stir until thickened, 3-4 minutes.
- Split biscuits, ladle gravy over the bottoms, add tops, and serve hot with extra pepper.
Notes
The gravy thickens as it cools, so take it off the heat just before it reaches your ideal consistency. If you need to hold it for a few minutes before serving, place a lid on the skillet off the heat and whisk in a splash of milk right before spooning.
