Ingredients
  

  • 1 lb loaf day-old challah or brioche
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup packed brown sugar
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/2 cup all-purpose flour
  • 1/2 cup chopped pecans (optional)

Method
 

  1. Butter a 9-by-13-inch baking dish. Tear the bread into rough chunks and spread evenly in the dish.
  2. Whisk eggs, milk, cream, granulated sugar, vanilla, cinnamon, and salt until smooth. Pour over bread, press down gently, cover, and refrigerate at least 4 hours or overnight.
  3. Preheat oven to 350°F (175°C). Combine brown sugar, flour, and cold butter until clumpy. Stir in pecans if using.
  4. Scatter streusel over the soaked bread and bake 45 to 50 minutes until puffed and golden, covering loosely with foil if the top browns too fast.
  5. Let rest 5 minutes, then spoon onto plates and serve with maple syrup.

Notes

For the softest texture, assemble the casserole the night before and chill it overnight. If you are short on time, a 4-hour rest in the fridge still works; just press the bread into the custard a few extra times before you refrigerate.
