Pineapple Loaf Cake Recipe

Ingredients
  

  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 8 oz (226g) canned crushed pineapple, drained (reserve 2 tbsp juice)
  • ¼ cup (55g) unsalted butter
  • ¼ cup (50g) packed light brown sugar
  • 2 tbsp heavy cream

Method
 

  1. Preheat oven to 350°F (180°C). Grease a 9x5-inch loaf pan and line with parchment. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  2. In a separate large bowl, whisk granulated sugar, oil, eggs, and vanilla until smooth.
  3. Add dry ingredients to wet, stir until just combined, then fold in drained pineapple and the reserved 2 tbsp juice until no dry streaks remain.
  4. Transfer batter to the prepared pan, smooth the top, and bake for 55-65 minutes until golden and a toothpick inserted in the center comes out clean.
  5. While the cake bakes, melt butter and brown sugar in a small saucepan over medium heat, stirring constantly. Add heavy cream, simmer for 2-3 minutes until thickened.
  6. Cool the cake in the pan for 10 minutes, then lift out. Pour the warm glaze over the warm loaf and let set briefly before slicing.

Notes

Cool the cake just 10 minutes in the pan before glazing; too long and the glaze won’t soak in as nicely. If the glaze thickens too much before pouring, rewarm it gently on the stove.
